Chongqing Mao Xue Wang | 重庆毛血旺

Chongqing Mao Xue Wang is popular cuisine in Yunnan and Sichuan, the ingredients are tripe, duck blood curd, ham, and chicken gizzard and so on. Adding bean sprouts, chili, Sichuan peppercorn, and sesame, spices to season them well. We use Spicy Element Hot and Sour Sauce for this cuisine, it is very quick and easy to make authentic Chongqing Mao Xue Wang. This recipe is very easy and delicious for beginner who is craving authentic Chongqing Mao Xue Wang.

Ingredient:

  1. trip 150g
  2. duck blood curd 150g
  3. ham 150g
  4. chicken gizzard 150g
  5. bean sprouts 100g
  6. oil 50g
  7. dried chili 50g
  8. Sichuan peppercorn 15g
  9. Sesame 5g
  10. Parsley 10g
  11. Spicy Element Hot and Sour Sauce 150g

Instruction:

  1. Clean up trip, blood curd, and chicken gizzard and cut into slices, cut ham into slices and clean up bean sprouts set aside;
  2. Boiled water 500g and add Spicy Element Hot and Sour sauce 150g;
  3. After water boiled, add trip, blood curd, and chicken gizzard until cook
  4. Boiled another hot water and add bean sprouts into pot and boil them until tender and set aside;
  5. Put chicken gizzard, ham, trip and blood curd with bean sprouts together;
  6. Add oil into the wok and then add Sichuan peppercorn and chili pepper until aromatic sauté, pouring in the bowl;
  7. Sprinkle sesame and parsley on the top and ready to serve.

  • If you can find an asian market in your area it will have some types of animal blood. There are no regulations against selling this in the US

    Not sure where you live. But in Houston, Texas we can get the Pork Blood Curd at the local Chinese grocery stores. I am not sure about the regulation. But I would assume the butcher might risk selling you the blood because of the liability issue.

    Nice recipe! However I can’t get blood curd anywhere. I cant even make my own since my bucher won’t sell me any blood products (regulations).

    The best substitute I’ve found for the duck blood curd is Polish Doktorska …. but not quite the same thing.

    Anyone have any recomendations?
