麻婆豆腐是一道经典的川菜美食菜式。它有豆腐混合辣椒和豆瓣等烹制而成,豆腐表面是鲜红油亮薄薄的一层淀粉,表面上再撒上一层花椒粉。麻婆豆腐可以添加其他一些食材形成不同风味,比如肉末、洋葱、其他蔬菜以及黑木耳等。

Mapo tofu (mapo doufu), is a classic dish of Sichuan Cuisine. It is a combination of tofu set in a spicy chili- and bean-based sauce, typically a thin, oily, and bright red suspension, with the famous numbing Sizhuan pepper powder spray on top of it. Variations exist with other ingredients such as minced meat, onions, other vegetables, or wood ear fungus.

推荐用量:每500克豆腐使用麻婆豆腐调味料60克

一、将豆腐洗净切成2厘米左右的方块,加水煮开约3分钟,起锅备用;二、另起一锅,加油烧热,加肉末50克,再加入麻婆豆腐调味料,文火翻炒均匀后,炒香后加水烧开,加入豆腐煮沸5分钟左右;三、勾芡收汁,搅拌均匀后,再勾芡收汁搅拌均匀,再第三次勾芡收汁搅拌均匀,起锅撒上花椒、葱花或蒜苗末,即可食用。.

Recommended usage: 2 ounce Mapo Tofu Sauce for every pound of Tofu

  1. Cut the tofu into 1-inch cube and simmer in the boiled water for 2 minutes and get out of water for later use;
  2. Add in cooking oil in the wok and heated to about 250F, then add minced meat (pork or beef), stir fry it;
  3. Add in the MaPo Tofu Sauce and stir fry with small flame till the flavor comes out;
  4. Add water and tofu into the wok (one or two cup depending on the amount of tofu);
  5. While waiting for the water boiled in the wok, mixed 3 tea spoons of bean starch (corn starch) and 3 tea spoons of water in a bowl;
  6. Add 1/3 of the starch mix in the wok after the water boiled and stir the wok and mix the starch with tofu;
  7. Then repeat step 6 twice and turn off the stove and then Mapo Tofu is ready to serve
