Cloves (Ding Xiang) are the bud of the flower from the evergreen clove tree. The buds initially are green color then turn into a bright red, and then the buds are picked by hand when cloves turn brown in color. Cloves are harvested at 1.5–2.0 cm long, and consist of a long calyx that terminates in four spreading sepals, and four unopened petals that form a small central ball.
People use bud, stems, and leaves to cook or make medicine, and cloves are used widely in the cuisine of Asian, African, and Middle East countries. They are common spices to give aromatic and flavor qualities to hot beverages and something combines with lemon and sugar. They are also very good source of vitamin K, dietary fiber, iron, magnesium and calcium.
